5 oz (140 g) boneless, skinless chicken breast
1 tbsp (15 mL) olive oil
½ onion, small dice
1 small red chile pepper, seeded and finely chopped
1 garlic clove, minced
2 button mushrooms, sliced
1 (1-inch | 2.5 cm) piece fresh ginger, cut into fine strips
1 tomato, diced
1 tbsp (15 mL) vegetable broth or water
Black pepper to taste
1 tbsp chopped fresh cilantro leaves
1 tsp sesame seeds (for garnish)
Cut the chicken breast into bite-sized pieces.
In a large skillet or wok, heat the olive oil over medium-high heat. Sauté the onion, chile, and garlic for about 2 minutes until softened.
Add the chicken and stir-fry for 3–5 minutes until evenly browned.
Stir in the mushrooms and ginger. Cook until the mushrooms soften and the chicken is fully cooked.
Add the diced tomato and vegetable broth. Season with black pepper and stir to combine.
Garnish with fresh cilantro and sesame seeds. Serve hot and enjoy!
