A refreshing, vibrant salad with the perfect balance of sweet and savory! This chickpea and mango salad is inspired by tropical flavors and is packed with protein, fiber, and antioxidants. The combination of juicy mango, creamy avocado, and hearty chickpeas makes it a perfect lunch or light meal. 🌿✨
✅ 1 cup (170g) canned chickpeas, drained and rinsed
✅ 1 cup (128g) cubed mango (fresh or thawed frozen)
✅ ½ avocado, cubed
✅ 3-4 cherry tomatoes, halved
✅ 1 spring onion or green onion, sliced on the diagonal
✅ 2 tbsp (30mL) olive oil
✅ 1 tbsp (15mL) balsamic vinegar
✅ 1 tbsp finely chopped fresh cilantro
✅ ¼ tsp ground cumin
1️⃣ In a bowl, toss together the chickpeas, mango, avocado, tomatoes, and spring onion.
2️⃣ Add the olive oil, balsamic vinegar, cilantro, and cumin.
3️⃣ Stir gently to combine all ingredients.
