
Stir-Fried Veggies with Tofu

A comforting and healthy twist on traditional pancakes! These rye-based pancakes are enriched with the natural sweetness of softened apples and the warm flavor of cinnamon. A perfect low-glycemic breakfast or snack, best enjoyed with fresh berries or other nutritious toppings.
✅ 1 large egg
✅ 2 tbsp (16 g) rye flour
✅ 1 tsp baking powder
✅ ½ tsp (2.5 mL) vanilla extract
✅ ½ tsp ground cinnamon
✅ Pinch of salt
✅ 2 tbsp (30 mL) water
✅ 1 medium apple, cored and sliced into 4–5 rounds
✅ 1 tsp (5 mL) coconut oil
1️⃣ Prepare the Batter:
• In a bowl, whisk the egg.
• Add rye flour, baking powder, vanilla extract, cinnamon, and salt.
• Mix thoroughly and set aside.
2️⃣ Soften the Apples:
• Heat water in a medium skillet over medium heat.
• Add the apple slices, cover, and steam for 3-4 minutes until softened.
• Carefully remove the apple slices and wipe any remaining water from the pan.
3️⃣ Cook the Pancakes:
• Return the pan to the heat and add coconut oil.
• Place the softened apple slices back in the pan without overlapping.
• Spoon equal amounts of the batter over each slice.
• Let cook for about 2 minutes until the batter sets.
4️⃣ Flip & Serve:
• Carefully flip the pancakes and cook for another 2-3 minutes until lightly browned.
• Transfer to a plate and serve warm.
