Ingredients
- 5 oz (140 g) boneless lamb, cut into bite-size pieces

- 1 cup (240 mL) water
- 1 tsp (5 mL) olive oil
- ½ small eggplant, peeled and halved lengthwise
- 5 cherry tomatoes, halved or ½ tomato, diced
Instructions
- Cut the lamb into bite-size pieces and set aside.
- In a medium pot, combine the lamb, onion, turmeric, salt, and black pepper.
- Stir-fry over medium-high heat for about 3 minutes, until the lamb is lightly seared on the outside.
- Add the water, reduce heat to low, cover, and simmer for 10 minutes.
- Meanwhile, heat the olive oil in a nonstick skillet over medium heat.
- Add the eggplant and sauté for about 5 minutes, turning to sear all sides until golden brown.
- Transfer the eggplant to a cutting board and cut into bite-size pieces.
- Add the eggplant and tomatoes to the pot with the lamb.
- Cover and continue cooking over low heat for 30 minutes, or until the lamb is tender.
- Toward the end of cooking, remove the lid if excess liquid remains and allow it to reduce slightly.
- Adjust seasoning with salt and pepper before serving.
