If you’ve ever traveled to Greece, you’ve likely enjoyed a fresh, colorful salad bursting with flavor. The Mediterranean diet is often considered one of the healthiest in the world, emphasizing fresh fish, fruits, vegetables, nuts, and whole grains while being low in unhealthy fats and sugars. 1 Roma tomato, chopped
¼ green bell pepper, chopped
¼ cucumber, chopped
¼ red onion, chopped
½ cup (80 g) crumbled or cubed feta cheese
5 pitted olives, cut in half
2 tbsp (30 mL) olive oil
Juice of ½ lemon
1 tsp fresh basil
1️⃣ In a large bowl, toss together the chopped tomato, bell pepper, cucumber, and red onion.
2️⃣ Add the crumbled or cubed feta cheese and halved olives to the bowl.
3️⃣ Drizzle the mixture with olive oil and lemon juice.
4️⃣ Sprinkle the fresh basil over the top.
5️⃣ Gently toss everything together to combine. Serve immediately for the best flavor and freshness.
