
Vitamin C Salad with Lemon Ginger Dress

1 dash | Black pepper |
2 tbsp | Black walnuts |
1 cup | Green/yellow string beans, raw |
2 tbsp | Olive Oil, Extra Virgin |
1/4 tsp | Salt |
0.12 medium | Yellow onion (thinly sliced) |
1/4 tsp | Garlic powder |
Cut off green beans ends, boil green beans 3-4 minutes.
In a large skillet, heat half of the olive oil over medium heat and cook onions, stirring, for 5 minutes. Add walnuts and garlic and cook, stirring, for 2 minutes.
Add the remaining oil and green beans. Season with salt and pepper, stir and cook for 2 minutes.
Serve as an appetizer or with parboiled rice to make a complete meal.
