This Garlic Caesar Salad is a family-favorite classic — rich, flavorful, and satisfying. Featuring marinated lemon-garlic chicken, homemade whole-grain croutons, and a creamy Caesar dressing, it’s the perfect balance of protein and crunch.
Whether served as a light lunch or a dinner side, this salad supports a balanced diet and provides antioxidants and healthy fats from olive oil.
Chicken
2 (5-oz | 140-g) boneless, skinless chicken breasts
Juice of 1 lemon
2 tbsp (30 mL) olive oil
1 tbsp (15 mL) Dijon mustard
½ baguette, cut into 1-inch (2.5 cm) cubes
3 tbsp (45 mL) olive oil
½ tsp garlic powder
Salt and black pepper, to taste
Marinate the Chicken
In a small bowl, whisk together lemon juice, olive oil, and Dijon mustard. Pour over chicken breasts, turning to coat well. Cover and refrigerate for at least 1 hour (or overnight).
Bake the Chicken
Preheat the oven to 350°F / 175°C. Bake for about 30 minutes or until fully cooked.
Prepare the Croutons
Toss bread cubes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake for 20 minutes, turning halfway through, until golden and crisp.
Assemble the Salad
Slice the cooled chicken against the grain. Combine with lettuce, croutons, and dressing. Serve immediately.
