Dijon Chicken with Pesto Asparagus Pasta

Ingredients
Chicken
- 4 (6-oz | 170-g) bone-in, skin-on chicken breasts
- ½ cup (120 mL) Dijon mustard
- Juice of 1 lemon
Pesto Pasta
- 1 bunch asparagus, ends trimmed
Instructions
- Marinate the Chicken:
Place chicken breasts in a large bowl. Add Dijon mustard and lemon juice. Toss well until coated evenly. Cover and refrigerate for at least 1 hour, or overnight for best flavour. - Bake the Chicken:
Preheat oven to 350°F / 175°C. Transfer chicken to a baking dish and bake for about 45 minutes, or until golden and crispy. Once cooled, cut into bite-size pieces and set aside. - Prepare the Asparagus:
Bring a large pot of water to a boil. Add asparagus and boil for 2 minutes, until crisp-tender. Transfer to a cutting board and let cool slightly. Cut into bite-size pieces and set aside. - Combine and Serve:
Mix cooked pasta, asparagus, and chicken with 1 cup of freshly made basil pesto (see continuation for pesto recipe). Toss until coated evenly. Serve warm and garnish with freshly grated Parmesan or Asiago cheese.
