1️⃣ Steam the Onion: In a medium saucepan, combine the onion and water. Cover and steam over medium-low heat for 2 minutes.
2️⃣ Add Seasoning: Stir in the curry powder, cumin, and garlic to coat the onion.
3️⃣ Simmer the Vegetables: Add the broth, cabbage, carrot, and ginger. Increase the heat to medium and simmer uncovered for about 15 minutes until the vegetables are soft.
4️⃣ Add Tofu & Finish Cooking: Stir in the smoked tofu and cilantro. Cook for another 5 minutes. Season with salt and black pepper to taste.
5️⃣ Serve & Enjoy: Garnish with fresh cilantro and serve warm.
