
Black-Eyed Peas and Crackers

This delicious and nutritious beef and mushroom meatball recipe is perfect for a satisfying meal. Packed with protein and savory flavors, it pairs well with spiralized zucchini or roasted vegetables.
5 oz (140 g) beef tenderloin or beef fillet, ground
1 tbsp (15 mL) olive oil
1 large button mushroom, finely chopped
1 Roma tomato, finely chopped
½ onion, finely chopped
1 garlic clove, minced
1 tsp dried basil
A pinch of dried oregano
Salt and black pepper to taste

1️⃣ Preheat the oven: Set to 350°F (175°C) and line a rimmed baking sheet with aluminum foil or parchment paper.
2️⃣ Prepare the mixture: In a large bowl, mix the ground beef with all the other ingredients until well combined.
3️⃣ Form the meatballs: Divide the mixture into 6 equal portions and shape each into a meatball.
4️⃣ Bake: Place the meatballs on the lined baking sheet and bake until cooked through, about 20 minutes.
