3½ oz (100 g) cooked boneless, skinless chicken breast
½ avocado, diced
1 tbsp (15 ml) fresh lime juice
⅛ tsp chili powder
Salt and black pepper, to taste
1 celery rib, chopped
1 tbsp chopped onion
Fresh cilantro, chopped (for garnish)
Cut the cooked chicken into bite-sized pieces.
In a medium bowl, mash half of the avocado with a fork.
Add the lime juice, chili powder, salt, and pepper, and stir until creamy.
Add the chicken, celery, and onion to the mixture and mix well.
Fold in the remaining avocado pieces gently.
Garnish with fresh chopped cilantro and serve.
